Double Chocolate Mocha Pancakes

 1 ¾ cups - San Antonio River Mill Brand® Sweet Cream Pancake Mix
 ½ cup - brown sugar
 ¼ cup - cocoa powder
 ¼ tsp - cinnamon
 1 cup - coffee, brewed and cooled
 2 tbsp - mini chocolate chips, semi-sweet

Preheat griddle of frying pan to 375˚F. Spray griddle/frying pan with pan release.

Combine all dry ingredients together in a large bowl; whisk to combine.

Slowly add coffee whisking together.

Ladle 1/4 cup of batter onto hot griddle of fry pan. Sprinkle mini chocolate chips evenly over batter.

Turn pancake when small bubbles appear on surface and edges begin to dry.

Serve with strawberries and whipped cream, or sprinkle with powdered sugar.
