Double Chocolate Mocha Pancakes

1 3/4 cups San Antonio River Mill Brand® Sweet Cream Pancake Mix

1/2 cup brown sugar

1/4 cup cocoa powder

1/4 tsp cinnamon

1 cup coffee, brewed and cooled

2 tbsp mini chocolate chips, semi-sweet


1Preheat griddle of frying pan to 375˚F. Spray griddle/frying pan with pan release.

2Combine all dry ingredients together in a large bowl; whisk to combine.

3Slowly add coffee whisking together.

4Ladle 1/4 cup of batter onto hot griddle of fry pan. Sprinkle mini chocolate chips evenly over batter.

5Turn pancake when small bubbles appear on surface and edges begin to dry.

6Serve with strawberries and whipped cream, or sprinkle with powdered sugar.
